That Dunkey video is a bummer, because damn it, I love Dunkey =/. Here's the thing, media outlets will never be individual youtube channels, obviously. The IGNs, Polygons, Gamespots, etc hire a bunch of reviewers because it's the only way to bring you reviews of every major game at the earliest possible time. As a result of that, sure, the consistency of voice is lost, because while one person may think that God Hand's intentionally limiting control scheme and punishing difficulty make it a terrible game, others at the company may think it's one of the most unique and satisfying PS2 beat em ups out there (me!).
The honest truth is that it's on you guys to pay attention to the bylines of reviews. Get a feel for which individual reviewers your tastes align with, follow them on twitter, and know that reviews are from people rather than from a faceless, massive, and inconsistent entity.
As for the other stuff, ugh. Yeah not even giving the "paid off reviewers" shit argument the time of day. Also Crash N'Sane Collection is a remade collection, so it's not all that surprising for a reviewer to not play through each game if they've already done so for the previous versions. The games don't change all that much, and the small ways in which they do can be observed early on.
