Nova Launcher: A free/paid Launcher app that amps up the default Nexus 7 interface a bit. Paid version is definitely better but feel free to try it out first.

AdFree: This will ONLY work if you root your tablet, but it removes 99% of ads from free programs. Well worth the effort to root your tablet. Let me know if you want more details on that.

Aldiko: Great eBook reading app. Completely free.

AndChat: For IRCing. Free.

aTorrent: For torrenting. Free.

ES File Explorer + RockPlayer Lite: Using a combination of these two apps and a PC, you can stream most types of video right to your tablet. Let me know if you want more details! Free for both.

FireFox: If you're a fan of Firefox this browser is great. Has sync with it too. But stick with Chrome if you're a Chrome guy.

imo: Great instant messenger. Free.

K-9 Mail: Best mail app on Android bar none. Free.

Mango: It's a manga reader, if you're into that sort of thing. Free.

Reddit News: The best damn app for wasting time. Free with paid version to remove ads.

Sixaxis Controller: If you get this, you can use emulators on your tablet with a DualShock 3 controller. Don't even need the adapter for the Nexus 7's USB port, but it takes a few extra steps to do that. Costs a buck.

Hacker Keyboard: Makes it infinitely easier to type on the Nexus 7. Free too!

For games I recommend Dead Trigger, Angry Birds and Temple Run. All free.

You can emulate a LOT of old consoles on the Android platform as well. The apps that have names that end with ".emu" (such as "NES.emu", "GBA.emu", etc) are the best, but they all cost money (well worth it though, since they all work right away with Sixaxis Controller). There are a few free emulators to recommend as well (SuperGNES for SNES, FPse for PlayStation, MAME4droid for arcades (although that one is hard to get running right).
